We eat well in our house. We rarely eat out and like to cook from scratch. Most of the time. There are a few crazy lunchtimes thrown in there where a Mama such as myself can appreciate the bag of chicken tenders in the freezer. Add some veggies and voila! A meal in 20 minutes that requires minimal clean up. We are also big fans of PB & J for lunch around here as well. Even faster with even less clean up.
Lately, I have been compelled to photograph what we eat. Totally random. Some days I click away, some days I don’t. So what you see is a small assortment of what we ate over the past week..
Dessert first, okay? We celebrated a happy event one night last week with Key Lime Cheesecake and Champagne. I won’t pretend…we didn’t make the cheesecake. Jim walked through the door with this monster of a cheesecake and I thought my eyes would fall out of my head. I asked him who he thought was going to eat all of that. His response? “Us.”
Another night we had grilled chicken salad for dinner. This was a rushed dinner, so I just sauteed chicken breasts in garlic, olive oil and lemon juice. I seasoned with salt and pepper and some thyme. Threw it on a bed of lettuce ( I like green leaf or romaine, not iceburg) with some tomatoes, yellow pepper, carrots and thawed green peas. Add a small slice of Dubliner cheese, nom nom.
And then there is pizza. We have pizza about once a week at our house. Always made from scratch…the dough and the sauce. Usually it is piled high with veggies, but Jim recently requested just a sausage/pepperoni pizza. No problem! I think that the pizza stone is key to the whole pizza making success. That and my big monster of a Kitchen Aid mixer.
